Basil Chicken and Rice: Claire Soto

Serves: 4

Ingredients:
1 onion
2 chicken breasts, cubed
2 cans chicken broth
2 c instant rice
dried basil
parmesan cheese
butter

Instructions:
1.  Cook onion in portion of broth.  Add rest of broth and chicken, cook.

2.  When chicken is almost done, add lots of dried basil to taste.  Bring to boil and add rice.

3.  Cover and cook 5 minutes.

4.  Add butter, parmesan, salt, and pepper.  Serve.
